MUSHROOM PITA PIZZAS 
2 pita breads, 6 inches
2 c. (5 oz.) sliced mushrooms
1 sm. red onion, thinly sliced & separated into rings
1/4 c. green peppers
2 tbsp. fresh basil leaves or 2 tsp. dried basil
1 c. shredded mozzarella cheese
1 tbsp. grated Parmesan cheese

Heat oven to 425 degrees. Split each bread into halves around edges with knife to make 4 rounds. Place round's, cut sides into ungreased cookie sheet, place onions, peppers, mushroom and cheese on top of bread. Cook for 8 to 10 minutes.
