MY MOTHER'S LEMON SQUARES | |
1 c. flour Pinch of salt 1/2 c. confectioners' sugar 1/4 c. softened butter Sift flour, salt and sugar together. Cut in 1/4 cup butter. Pat into well-buttered 8x8 inch baking pan. Bake at 350 degrees for 15 to 20 minutes until slightly browned. While baking, mix together: 1 c. sugar Juice of 1 lemon Grated lemon peel Pour over baked dough and bake 20 to 25 minutes at 325 to 350 degrees. Sprinkle with confectioners' sugar while warm. Cut into squares when cool. Closest thing to lemon pie. Freezes well. |
