TART LEMON SQUARES 
3/4 stick butter, softened
1/4 c. powdered sugar
1 c. plus 3 tbsp. all-purpose flour
3 eggs
1 c. granulated sugar
Grated rind of 1/2 lemon
1/4 fresh lemon juice

Heat oven to 350 degrees. Combine butter, powdered sugar and 1 cup flour with pastry blender. (Will be crumbly.) Pat dough into 9 inch square baking pan. Bake dough for 15 minutes. Meanwhile, combine eggs, sugar, rind, juice and remaining 3 tablespoons flour; mix well. Pour lemon mixture over hot crust. Bake 15 to 20 minutes longer until firm. Cool. If desired, sprinkle with powdered sugar when still warm.
