TART LEMON SQUARES 
6 tbsp. butter
1/4 c. confectioners' sugar
1 c. plus 3 tbsp. flour
3 eggs
1 c. granulated sugar
Grated rind of 1/2 lemon
1/4 c. fresh lemon juice
Confectioners' sugar

1. Preheat oven to 350 degrees.

2. Combine butter (butter), confectioners' sugar and 1 cup of flour in food processor. Process until blended (10 seconds). Pat dough into an even layer on bottom of 9 inch square baking pan.

3. Bake dough for 15 minutes until lightly browned.

4. Meanwhile - combine eggs, granulated sugar, lemon rind, lemon juice and remaining 3 tablespoons flour in food processor. Process until well blended - pour over hot crust.

5. Bake for 15 to 20 minutes until firm. Cool on rack - sprinkle with confectioners' sugar while warm.

6. Cut in small squares when cool.

Makes about 36 squares.
