GARDEN TACO RICE 
1 lb. ground beef
1/2 c. chopped onion
1 pkg. taco seasoning mix
1 1/2 c. water
1 1/2 c. thinly sliced zucchini
1 c. frozen corn
1 can stewed tomatoes
1 1/2 c. uncooked instant rice
4 oz. shredded Cheddar cheese

In large skillet brown ground beef and onion; drain. Stir in remaining ingredients, except rice and cheese; bring to a boil. Stir in rice. Reduce heat to low; cover and simmer 5-7 minutes or until liquid is absorbed, stirring occasionally. Remove from heat. Fluff with fork; sprinkle with cheese. Cover; let stand 3 minutes or until cheese is melted.
