BEEF CASSEROLE - ONE DISH MEAL 
4 med. potatoes, diced
1 lg. onion, chopped
2 pieces celery, chopped
1 tsp. salt
1 c. tomato juice
4 lg. carrots, sliced
1 bell pepper, chopped
1 tbsp. oil or butter
Pepper to taste

Cook together until vegetables are tender. 1 can green peas, drained 2 lb. lean ground beef, cooked and drained 1 qt. tomatoes Salt and pepper to taste

Grease baking dish 9 x 13 inch. Place cooked vegetables in dish first. Add rice, peas, beef, then tomatoes. Bake at 350 degrees for 1 hour.
