PINEAPPLE CASSEROLE 
1 (20 oz.) can pineapple chunks, drained
1/2 c. sugar
3 tbsp. flour
3 tbsp. lemon juice
1 c. (4 oz.) shredded Cheddar cheese
1/4 c. butter, melted
1/2 c. crumbled buttery crackers

In a 1-quart casserole, combine pineapple chunks, sugar, flour, lemon juice and cheese. Mix butter with crackers. Sprinkle over pineapple mixture. Bake uncovered in a preheated oven at 350 degrees for 20 minutes. Serves 6.
