RUGELACH 
1 c. cottage cheese
1 1/4 c. butter
2 c. flour
3/4 c. brown sugar
1/4 tsp. cinnamon
3/4 c. chopped walnuts
1 egg yolk
2 tbsp. water

Combine cottage cheese and 1 cup butter in one bowl. Add flour gradually beating until dough forms a ball. Divide in thirds. Wrap and chill about 1 hour. Roll each ball into 9 inch circle. Combine remaining butter, brown sugar, cinnamon and nuts. Spread each circle with 1/3 of mixture. Cut each circle into 16 triangles. Roll each tightly beginning at wide end. Place point side down on greased sheet. Beat egg yolk and water. Brush on each cookie. Bake at 400 degrees, 20 minutes.
