GEN'S EGGS CHARTNES 
1 c. onions, diced
1/3 c. butter
1/4 c. flour
2 c. milk
1/4 tsp. salt
1/4 tsp. cayenne
5 tbsp. parmesan cheese
1 tbsp. paprika
6 eggs, hard boiled

Saute onions in butter. Save about 1/4 cup butter for white sauce; combine with milk, flour, salt and cayenne. Heat white sauce until thickened, stirring constantly. Add onions and 3 tablespoons parmesan. Slice hard boiled eggs. Save some to decorate top and add to other ingredients in small casserole. Top with egg slices, 2 tablespoons parmesan and paprika. It is Okay to make in advance and freeze. Heat before serving.
