WHOLE GRAIN APPLE MUFFINS 
1 1/4 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
1/2 tsp. ground cinnamon
2 tbsp. brown sugar
2 c. Nutri-Grain cereal, any variety
1 1/4 c. milk
1 egg
3 tbsp. vegetable oil
1/2 c. shredded or finely chopped apple

1. Stir together flour, baking powder, salt, cinnamon and sugar. Set aside.

2. Measure Nutri-Grain cereal and milk into large mixing bowl. Stir to combine. Let stand about 5 minutes or until cereal is softened. Add egg and oil. Beat well.

3. Add flour mixture, stirring only until combined. Stir in apple. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups.

4. Bake at 400 degrees for 20 minutes or until lightly browned. Serve warm. Yield 12 muffins.
