CRUSTLESS CRAB QUICHE 
6 to 8 oz. Alaska Snow Crab (frozen or canned); reserve liquid
4 slices bacon
3 eggs
1/2 c. biscuit mix
1/3 c. melted butter
1 1/2 c. milk
1/8 tsp. salt
Dash of pepper
2 c. shredded Swiss cheese
Parsley for garnish

Thaw crab if frozen, drain, reserving liquid. Slice crab meat, reserving whole leg piece for garnish.

Fry bacon until crisp. Drain and crumble. Beat together eggs, biscuit mix, butter, milk, crab liquid, salt and pepper until smooth.

Pour into 9 inch pie plate. Sprinkle crab, cheese and bacon over top and press down gently. Bake for 35 to 40 minutes at 350 degrees.

Garnish with parsley and reserved leg meat. Cut into wedges and serve. Makes 6 to 8 servings.
