COMPANY MEAT ROLL 
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
1 1/2 tbsp. parsley flakes
1/4 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 sm. clove garlic, minced
2 lbs. ground beef
8 slices ham, sliced thin
6 oz. Mozzarella cheese, shredded
3 slices Mozzarella cheese

Combine eggs, crumbs, tomato juice, parsley flakes, oregano, salt, pepper and garlic. Add ground beef and mix well. Put out to form a rectangle (about 10x12). Arrange ham on top; sprinkle with shredded cheese.

Starting from short end, roll up, seal edges and ends. Place seam side down in 9x13 pan. Bake 1 1/4 hours at 350 degrees. Before serving, arrange slices of cheese on top of loaf and return to oven for about 5 minutes or until the cheese has started to melt. Remove from oven; place on serving platter. Garnish with parsley and twists of orange slices. Serves 8
