WEIGHT WATCHERS CHICKEN & CHEDDAR | |
2 tbsp. butter 2 tbsp. flour 2 tsp. chicken bouillon 1 tsp. dry parsley 2 tbsp. dehydrated onions (optional) 4 oz. shredded cheddar 1 c. skim milk 1 c. sliced mushrooms (or 2 4 oz. cans) 8 oz. cooked chicken, cubed 2 c. cooked broccoli 1 sm. jar pimentos Melt butter in saucepan. Blend in flour and dry ingredients above. Add a little at a time. Stir to keep smooth. Cook and stir until thick. Remove from heat and add chicken, mushrooms, and pimentos (arrange broccoli in 2 quart casserole sprayed with Pam). Spoon chicken mixture over broccoli and top with shredded cheddar. Bake at 350 degrees for 30 minutes (very good served with rice). Makes 4 servings. Weight Watchers exchanges = 3 proteins, 1/4 milk, 2 veggies, 2 optional. |
