FIESTA BEEF 
1/2 lb. stewing beef or ground beef
1 tbsp. oil
1/3 c. onion, diced
1 clove garlic, chopped
4 fresh or canned chilies
1 1/2 tsp. chili powder
1/2 tsp. oregano
1 can tomatoes
1/2 tsp. salt
1/3 c. water
1 1/2 c. Minute rice
2 oz. Cheddar cheese, shredded
2 tsp. fresh parsley

Saute beef, onion, chilies and garlic in oil until beef is brown. Add seasonings, tomatoes (broken up) and water. Bring to a boil and stir in rice. Cover, remove from heat and let stand for 5 minutes. Top with cheese and parsley.
