PERSIMMON PUDDING 
1 c. peeled persimmon (very ripe)
1 1/4 c. whole wheat flour
1 c. sugar (scant)
1/2 c. milk
1 c. chopped walnuts, if desired
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 1/2 tsp. baking soda

Mix the above ingredients very well and pour into double boiler. Steam for 2 hours. Pour into serving bowls.

CARAMEL SAUCE:

1 c. brown sugar
1 c. water
2 tbsp. cornstarch (or flour) to thicken

Heat in saucepan to thicken. Top pudding with Caramel Sauce and whip topping.
