PUMPKIN APPLESAUCE BREAD | |
2/3 c. butter 2 2/3 c. sugar 4 lg. eggs 1 c. applesauce 1 c. pumpkin 3 1/2 c. flour 2 tsp. baking soda 1/2 tsp. baking powder 2 tsp. salt 3 tsp. cinnamon 1 tsp. nutmeg 1 c. or less apple juice 2 c. chopped walnuts or pecans Whole nuts for garnish Grease 2 or 3 (9x5 inch) pans. Cream butter and sugar. Add eggs, beating well after each one. Add applesauce and pumpkin. Alternately add dry ingredients with enough apple juice to make batter consistency. Fold in nuts. Pour into greased pans. Place whole nuts along top of loaf prior to baking. Bake 1 hour at 350 degrees. This makes 2 or 3 loaves. Freezes well. |
