SPEEDY SPINACH LASAGNA 
1.5 oz. pkg. spaghetti sauce mix
1 (6 oz.) can tomato paste
1 (8 oz.) can tomato sauce
1 3/4 c. cold water
2 eggs
15 oz. ricotta cheese or 16 oz. cottage cheese
1 (10 oz.) pkg. frozen chopped spinach, thawed & drained
1/2 c. grated Parmesan cheese
12 oz. Mozzarella cheese
1/2 lb. uncooked lasagna noodles, broken in half

Empty spaghetti sauce mix into sauce pan. Add paste, sauce and water. Heat, stirring. Remove from heat. Beat eggs in large bowl and add ricotta, spinach and 1/4 cup Parmesan cheese.

Lightly grease bottom of 9"x13" pan. Cover bottom with a little sauce. Layer noodles, half of cheese/spinach mixture, 1/2 Mozzarella and sauce.

Repeat, ending with sauce. Sprinkle 1/4 cup Parmesan cheese on top. Cover the dish with lightly greased sheet of aluminum foil. Bake at 350 degrees for 1 hour. Let stand for 10 minutes. Can be made with Italian sausage or hamburger that has been cooked and drained thoroughly.
