SALSA CALCOTADA 
1/4 c. toasted almonds, crushed
1/4 c. toasted hazelnuts, crushed
3 cloves garlic, crushed
3 med. tomatoes, peeled, seeded and chopped
1 slice toast, crumbled
1/2 c. olive oil
1/2 c. red wine vinegar
Pinch salt
Black and white pepper to suit

(For a HOT SAUCE add 2 romesco peppers after removing seeds; or use chili peppers instead.)

Mix and blend well. Allow to temper. Mixture tends to settle out on sitting. Stir well before using. Great with grilled vegetables.
