THE BEST BRAN MUFFINS | |
2 c. All Bran cereal 1 c. Bran Buds cereal 1 c. boiling water 2 c. buttermilk 2 1/2 tsp. baking soda 1 c. honey 2 eggs, beaten 1/2 c. vegetable oil 2 c. Miller's bran 1 c. flour 1/2 tsp. salt 1 c. raisins or chopped dates Mix All Bran and Bran Buds together with boiling water and set aside. Pour buttermilk into large mixing bowl. Stir in soda, honey, eggs, oil and cereal mixture and beat thoroughly. In another bowl, combine the Miller's bran, flour and salt. Add the flour mixture to the wet ingredients and beat. Pour into greased muffin tins and bake at 375 degrees for 20 to 25 minutes or until toothpick comes out clean. Serve warm. NOTE: Batter will keep refrigerated for 6 weeks so you can bake just as many as you need at a time. Do not stir batter after refrigerating. P.S. Miller's Bran can be purchased in some supermarkets or at any health food store. |
