SHISH KEBOB WITH LAMB, CHERRY TOMATOES & PEPPERS | |
MARINADE: 1 c. lemon juice 1 clove garlic, minced 1 tbsp. chopped onion 1 tbsp. oregano KEBABS: 1 lb. boneless lamb, cubed 12 med. size mushrooms 1 green pepper, cut into 2" squares 12 pearl onions 12 cherry tomatoes 1. Combine marinade ingredients in a pan, stirring well. 2. Marinate lamb for 1 to 2 hours or overnight. 3. Place all ingredients on skewers, alternating meat, onion, mushrooms, tomatoes and pepper squares. 4. Broil or barbecue 10 to 12 minutes for medium rare, basting the entire skewer with marinade. Serves 4. |
