BAVARIAN POTATO SOUP 
2 potatoes, pared, diced
2 carrots, pared, diced
1 ripe tomato, peeled, diced
1 sm. onion, peeled, minced
4 c. water
Pinch of ground ginger
Salt & pepper to taste
1 beef bouillon cube

Combine ingredients. Cover and simmer until potatoes and carrots are very tender, about 20 to 25 minutes. Serve immediately, or puree in the blender. Makes 4 servings.
