BUTTER COOKIES (BUTTER
BLATZCHEN)
 
6 eggs
1 1/2 lb. butter
1 1/2 lb. sugar
3 lb. flour
1 pkg. Hirsch horn Salz (ammonium hydrogen carbonate)
1 pkg. almonds, ground very fine
Lemon rind and juice from one lemon, optional

Mix well and knead good until smooth. Cover dough well and let stay in refrigerator up to five days. Roll out 1/4 inch and cut in shape. Paint with beaten whole egg. Bake until light golden brown in 350 degree oven.

May be purchased from drug store - turn your head, don't breathe in the fumes.
