KEY LIME PIE 
4 eggs, separated
1 c. sugar
1 tbsp. plain gelatin
2/3 c. lime juice
1/2 tsp. grated lemon rind
1/2 tsp. salt

Beat egg yolks, add 1/2 of sugar, lime juice and salt. Cook in double boiler until mixture coats a spoon. Remove from heat and add gelatin which has been softened in 1/2 cup cold water and rind. Mix well, chill until mixture begins to thicken. Beat egg whites until stiff, fold into chilled mixture with remaining sugar. Pour into a pre-baked pie shell, or graham crust. Chill. Serve with whipped cream.
