MEXICAN CORN CASSEROLE 
1 c. corn meal mix
1/2 c. oil
1 c. chopped onions
1 tsp. salt
1/2 lb. sharp cheddar cheese, grated
2 eggs
1/2 c. milk
1 c. bell pepper, chopped
1 lg. can creamed style yellow corn

Blend all ingredients. Cook at 350 degrees for approximately 1 hour in a 3-quart casserole dish.
