MENUDO 
1 lb. pork, diced
1 c. pork or beef liver, diced (optional)
2 tbsp. cooking oil
2 tbsp. minced garlic
1 med. onion, diced
1 1/2 tsp. salt
1/8 tsp. pepper
1/2 c. tomato sauce
2 med. potatoes, pared and diced
1/3 c. chick peas, boiled and peeled
1 tbsp. paprika
1 c. water

In a medium pot, cook the pork in water until tender. In a medium skillet, heat oil and saute garlic and onion. Add diced pork and saute until tender.

Season with salt and pepper. Add paprika, tomato sauce and water. Simmer covered for 40 minutes. Add potatoes cook for 10 minutes. Add liver, let simmer for 5 minutes more. Correct seasoning. Serve hot. Serves 4 to 6.

Variation: Add 1/4 cup chorizo or ham for richer flavor.
