EASY LAYERED SALAD 
Preparation time: 25 minutes. Serves: 6 to 8.

3 1/2 c. shredded iceberg lettuce
1 c. chopped celery
1 c. chopped red onion
1 c. chopped green pepper
1 1/2 c. chopped cooked ham
3/4 c. peanuts
1 pkg. (10 oz.) frozen petite peas, cooked & chilled
3 hard-cooked eggs, chopped
Parmesan cheese
Paprika
Red onion rings, for garnish

DRESSING:

1 c. mayonnaise
1 c. sour cream
1 tbsp. prepared mustard
Dash of paprika

1. In a straight-sided 3-quart clear bowl, layer lettuce, celery, onion, pepper, ham, peanuts and peas.

2. To make dressing, combine all ingredients.

3. Arrange chopped eggs around edge of dish. Sprinkle with cheese and paprika for color.

4. Spoon dressing over top of salad. To serve, "dig" all the way to the bottom of the bowl.

Good served with: Crusty French bread or whole wheat crackers.

HEALTH NOTE: To reduce calories in dressing, use low-calorie mayonnaise and light dairy sour cream.
