CHICKEN CACCIATORE 
1 med. onion, chopped
1 med. green pepper, chopped
1 tbsp. butter
2 cans (14 oz.) stewed tomatoes
1/4 c. flour
2 to 3 lb. chicken, cut up (whole or breasts)

1. Put onion, green pepper and butter in 3 quart microwave casserole. Cover and cook on HI (max power) for 6 to 8 minutes; until onion is translucent.

2. Add juice from stewed tomatoes and flour; stir until smooth. Stir in rest of the stewed tomatoes. Cover and cook on HI for 5 minutes.

3. Add chicken, covering with sauce. Cover and cook on SIMMER (or 50%) for 25 to 30 minutes, or until chicken is tender. Stir half way through cooking time.

4. Allow to stand, covered, 5 minutes before serving with hot rice or pasta.

Since microwave ovens vary in power, you may need to adjust your cooking time.
