AMBER'S BLACK BEAN PICO | |
This recipe is a great alternative to guacamole or plain ol' bean dip and makes a large, party-sized amount! 3 (15 oz. ea.) cans black beans, rinsed and drained 1 bunch green onions, chopped 1 jalapeno, finely chopped 2 vine-ripe tomatoes, seeded and chopped juice of 2 fresh limes 1 clove garlic, minced fresh cilantro to taste, chopped salt and pepper, to taste AND JUST BEFORE SERVING: 2 avocados, cubed In a large mixing bowl, combine black beans, green onions, jalapeno, tomatoes, lime juice, garlic, cilantro, and salt & pepper. Cover and refrigerate for 2 to 3 hours. Just before serving, dice 2 ripe avocados and toss into the black bean mixture to combine. Transfer to pre-chilled serving dish and serve immediately with tortilla chips. This dish goes really quick, but should you have any leftovers, they are best used within 12-18 hours (the avocado will brown and turn mushy, even with the lime juice). Submitted by: Amber |
