MINI CHEESE CAKES 
Vanilla wafers
2 (8 oz. each) pkg. cream cheese
1/2 c. sugar
2 eggs
1 tsp. vanilla
Cupcake paper liners
Your favorite topping (I use Thank You cherries)

Mix cream cheese until smooth and creamy; add eggs, sugar, and vanilla. Mix again; put one wafer in the bottom of each cupcake. Spoon cheese mixture onto wafer so each cup cake is about 2/3 full. Bake at 350 degrees for about 12 minutes. When cool, spoon on your favorite topping and serve.
