MINIATURE CHEESECAKE 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
2 eggs
1 tsp. vanilla
1 can peach, blueberry, or cherry filling (optional), or Nestles mini morsels
1/2 c. sliced nuts; optional

Line cupcake pans with tin foil liners. Place a vanilla wafer in bottom of each liner. In small bowl beat cream cheese, sugar, eggs, and vanilla until light and fluffy.

Fill the liners 3/4 full with cheese mixture. Bake in preheated 375 degree oven for 15-20 minutes or until set. Top each with spoonful of filling and 1 teaspoon of nuts. Chill. Serves 24.
