MINIATURE CHEESECAKES 
24 cupcakes liners (foil work better than paper)
24 whole vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 (20 oz.) can strawberry, peach, blueberry or cherry pie filling
1/2 c. sliced or chopped nuts (opt.)

Preheat oven to 375 degrees. Line muffin pan with liners. Place a vanilla wafer in bottom of each liner. In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill each liner 3/4 full with cheese mixture. Bake 15 to 20 minutes or until set. Top each with spoonful of pie filling and nuts. Chill. Serves 24.
