GRILLED LONDON BROIL
1/2 c. red wine vinegar
1/2 c. soy sauce
1/2 c. vegetable oil
1/2 tsp. black pepper
4 cloves of garlic, sliced
1 (3 1/2 lb.) London Broil

Combine first five ingredients in a large shallow dish, mixing well. Add steak. Turn to coat each side. Cover and refrigerate 12 hours. Remove steak from marinade. Grill covered over medium hot coals on each side until desired degree of doneness, basting occasionally with marinade. Remove from grill, wrap in foil after pouring excess marinade over steak. Let stand in marinade 5 minutes slice and serve.

Meat came out flavorful, although I am not as fond of using the vinegar for the acid (I much prefer using citrus juices). The one thing I will say is that you should never EVER use excess marinade from meat in the manner listed. Using it to baste while cooking is fine but using it in foil afterwards is just an invitation for potential food borne illnesses. If you want to do this, either reserve some of the marinade that has never touched the meat or cook it to kill any potential bacteria buildup.

Excellent advice regarding the used marinade. The marinade will not get hot enough to kill the bacteria.
