PIZZA RICE SKILLET | |
1 tbsp. butter 1 1/2 c. shredded zucchini 1 lg. onion, chopped 2 c. boiling water 3/4 tsp. Italian seasoning 3/4 c. pizza sauce 3/4 c. cut up cooked chicken 1 (4 oz.) can mushrooms, drained 1 (2.2 oz.) can sliced ripe olives, drained 1 to 1 1/2 c. shredded Mozzarella or Cheddar cheese In a 10 inch skillet, melt butter over medium high heat. Add zucchini and onion and cook, stirring, until soft, about 5 minutes. Stir in boiling water, rice and Italian seasoning. Heat to boiling, reduce heat to low. Cover and simmer about 20 minutes or until rice is almost tender. Spread pizza sauce evenly over rice, then arrange chicken on top. Sprinkle with mushrooms, olives and cheese. Cover skillet and cook over medium heat about 5 minutes, until cheese is melted. Vary the toppings, pizza style, to suit taste. Preparation: 10 minutes. Cook: 30 minutes. Serves: 4. |
