2 c. sifted flour 3 tsp. double action baking powder 1 tsp. salt 2 tbsp. sugar 1/2 c. Fluffo 1 c. milk 1 egg Combine flour, baking powder, salt and sugar in mixing bowl. With a pastry blender or fork tines cut in Fluffo until it is broken into fine particles. Mix milk and egg. Add to Fluffo/flour mixture and stir gently just until dry ingredients are moistened to make a lumpy batter. Fill muffin cups, rubbed with Fluffo 2/3 full and bake at 400 degrees to 20 to 25 minutes. For very sweet muffins: increase sugar to 1/2 cup. For cranberry walnut muffins: cut 1 cup fresh or frozen cranberries in half and sprinkle with 1 tablespoon sugar. Fold cranberries and 1/2 cup chopped walnuts into batter before putting batter into muffin cups. |
