YOGURT CHICKEN | |
3 lb. chicken breasts (6 halves) halved, boned and skinned 1/2 onion, minced 1 clove garlic, minced 1/2 c. yogurt 1/4 c. mayonnaise 1 tbsp. mustard (Grey Poupon) 1 tbsp. Worcestershire sauce 1/4 tsp. cayenne pepper 1/2 tsp. thyme 1 tbsp. butter Salt and pepper to taste 1/4 c. lemon juice 1/2 c. grated Parmesan cheese Brown chicken in butter with onion, garlic, salt and pepper. Place browned chicken in rectangular baking dish. Combine yogurt, mayonnaise mustard, Worcestershire sauce, cayenne, thyme and lemon juice. Pour sauce over chicken. Cover chicken. Bake at 350 degrees for 50 minute o convert to microwave time table. When done, drain sauce, sprinkle with 1/2 cup Parmesan cheese (grated) and broil for 2 to 3 minutes. |
