MORNING GLORY MUFFINS 
Beat well:

3 eggs

Add slowly:

1 1/4 c. sugar
3/4 c. oil
2 tsp. vanilla

Sift together and add to above:

2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt

Fold in:

2 c. grated carrots
1 grated apple
1/2 c. chopped walnuts
1/2 c. raisins
1/2 c. coconut

Bake: 15 to 17 minutes at 350 degrees. Makes about 24 muffins. Can use 3/4 cup 100% whole wheat flour in place of one cup of regular flour.
