MANICOTTI 
4 eggs
1 c. water
1 c. flour
2 tbsp. oil

Mix like pancakes and cook approximately 1/2 cup of batter to each pancake. Makes 16.

FILLING:

1 lb. Ricotta cheese
2 eggs
2 tbsp. dried parsley

Make pancakes. Mix filling.

Place 2 tablespoons of filling on each pancake and roll up. In baking dish add tomato sauce (sauce should be just warm, not hot). Place rolled pancakes in baking dish, top with sauce and add grated cheese. Bake at 425 degrees for 20 minutes. Serve with meatballs. Also may add grated mozzarella cheese to manicotti before baking.
