GERMAN POTATO SALAD 
1 onion chopped finely
1/4 c. bacon fat
2 tbsp. flour
2 tbsp. sugar
1/3 c. vinegar
2/3 c. water
1 egg beaten
8 med. cooked, cut up potatoes, hot
1/4 lb. diced cooked bacon, drained
Salt and pepper

Cook onion in the bacon fat several minutes. Do not brown. Remove from heat. Blend in flour and sugar. Add vinegar and water. Blend. Cook over moderate heat until thickened throughout, stirring constantly. Blend egg and potatoes. Stir in the hot sauce and bacon. Season. Let stand in warm place at least 30 minutes to blend flavors. Serve hot or warm. Yield 10 to 12 servings.
