RANCHO BEANS (FRIJOLES A LA
CHARA)
 
3-4 cups pinto beans
6 strips bacon
1 white onion, diced
1 teaspoon salt
2 jalapeno peppers
2 tomatoes
cilantro, chopped

Soak 3-4 cups pinto beans overnight in warm water with 1 teaspoon baking soda (reduces flatulence). Drain and rinse beans thoroughly (make sure all the baking soda is rinsed away).

Cover beans with fresh water, and add bacon, white onion, salt, jalapeño peppers. Seeds may be removed to reduce “heat”. Cook until beans are soft, then add tomatoes, chopped cilantro to taste.
