BROCCOLI AND BLEU CHEESE
CASSEROLE
 
2 tbsp. melted butter
2 tbsp. flour
3 oz. pkg. cream cheese, softened
1/4 c. crumbled bleu cheese
1 c. whole milk
2 pkgs. frozen chopped broccoli, cooked and drained well
10 Ritz crackers, crushed (equals about 1/3 c.)

In a large saucepan, blend butter, flour, and cheeses. Add milk, cook and stir until the mixture boils. Stir in the cooked broccoli. Place in a 1 quart casserole. Top with cracker crumbs. Bake uncovered at 350 degrees for 30 minutes.
