EGGS PORTUGAL 
2 c. cheddar cheese
1 lb. skinless sausage links, cut into thirds
8 slices white bread, remove crusts

SAUCE:

4 eggs
2 1/2 c. milk
3/4 tsp. mustard
1 lb. mushrooms, fresh, sliced & sauteed
1/4 c. dry vermouth

Line bottom of casserole dish with bread slices. Cover with cheese then sausage. Prepare sauce by mixing sauce ingredients. Cover with sauce. Bake at 350 degrees for 1 1/2 hours.

OLD RECIPE:

4 slices white bread
1 c. cheddar cheese, grated
1/2 lb. pork sausage, cooked & crumbled
6 eggs
2 c. milk
Salt, pepper & parsley to taste
Nutmeg or mustard to taste

Crumble bread and place in baking dish. Cover with cheese, then sausage. Blend remaining ingredients and pour over bread, cheese and sausage. Bake at 400 degrees for 45 minutes. Serves 6.
