BLENDER CATSUP | |
9 lb. tomatoes, peeled and quartered 4 sweet green peppers, seeded and quartered 4 lg. onions, quartered Put in blender 3/4 full. Blend at high speed until liquified. Pour into large kettle or electric roaster. Repeat until all vegetables are blended. 1/2 tsp. hot red pepper 3 tsp. salt 1 1/2 tsp. allspice 3 tsp. dry mustard 1 1/2 tsp. cloves 1 1/2 tsp. cinnamon Tied loosely in spice bag. 3 c. vinegar 3 c. sugar Simmer uncovered until catsup is reduced to 1/2 or desired consistency. Remove spices and pour into hot jars. Makes about 5 pints. |
