CHICKEN REUBEN 
4 chicken cutlets
1 (16 oz.) can sauerkraut, drained (press out excess liquid)
1 1/4 c. Thousand Island dressing
4 slices Swiss cheese (4x6 inch)
1 tbsp. chopped parsley (optional)

In a greased baking dish, place chicken. Top with sauerkraut, then Swiss cheese. Pour dressing over cheese evenly. Cover with aluminum foil and bake in a preheated 325 degree oven for about 90 minutes or until a fork can be inserted in chicken with ease. Sprinkle with chopped parsley. Serves 4.
