PENNY'S BUTTERSCOTCH BREAD
PUDDING
 
9 tbsp. butter (1 stick + 1 tbsp.)
1 1/2 cups brown sugar
3/4 tsp. baking soda
6 cups milk
6 cups bread cubes
3/4 tsp. ground cinnamon
6 eggs
pinch salt

In large saucepan melt butter and add brown sugar. Heat until completely combined. Dissolve baking soda in milk, add to sugar mixture and stir until well mixed, set aside to cool.

Cube bread about 3/4-inch square (bread similar to sourdough works best) and put in greased 2-quart baking dish. Sprinkle with cinnamon (you may like more or less than 3/4 tsp.)

Whip eggs by hand with salt and add to cooled milk mixture, combine completely. Pour over bread cubes and cinnamon. Let stand for 10 minutes to allow bread to soak up some of the liquid.

Bake in preheated 350°F oven for 1 hour.

Serve warm or chilled.
