MAPLE BAKED BEANS 
2 c. dried beans
1/4 lb. lean salt pork
1 tsp. salt
1 tsp. dry mustard
1 med. size onion (optional)
2 c. water

Soak beans overnight. Parboil in morning until skins start to break, about 40 minutes; drain. (I rinse thoroughly.) Put salt, syrup, (brown sugar if you don't have syrup), pork water, etc. over beans in bean pot. Cover.

Bake in 300-325 degree oven for about 3 hours. Maintain enough water level in bean pot to keep beans moist. A bit more syrup on beans at serving is extra special.
