EASY PEAR CAKE 
1 c. all-purpose flour
1 tbsp. packed brown sugar
1 tsp. baking powder
1/4 tsp. salt
3 tbsp. butter
1 egg
1 tsp. grated lemon rind
1/4 c. milk
3 pears, pared & sliced
1/2 c. sugar
1 tsp. ground nutmeg
3 tbsp. butter, melted

Mix flour, sugar, baking powder and salt. Add solid butter until mixture looks like cornmeal. In separate bowl beat together egg, lemon rind and milk. Combine with flour mixture. Pat out in a 9 inch square greased pan.

Arrange pears in 2 or 3 rows, push gently into dough. Sprinkle top with brown sugar and nutmeg. Top off with melted butter.

Bake in a preheated 325°F oven for 25 minutes, or until golden brown. Excellent Coffee Cake!
