2 eggs, well beaten 2 tbsp. sugar 1/4 tsp. salt 3/4 lb. fried figs, stewed 1 baked pastry shell Combine eggs, sugar, salt and figs; cook slowly until egg thickens. Turn into pastry shell. MERINGUE: 3 egg whites 1/4 tsp. salt 1/4 tsp. vanilla 1 tsp. lemon juice 6 tbsp. sugar Beat egg whites until foamy. Add remaining ingredients; beat until stiff. Spread on pie. Bake at 350 degrees until brown. May use fresh figs if precooked in a small amount of water. Use 2 cups. |
