BROWN SUGAR SPICE CAKE WITH
CARAMEL ICING
 
2 c. brown sugar
3/4 c. butter & lard, creamed
2 eggs, beaten
1 c. sm. raisins
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1 tsp. baking soda
1 c. sour milk
2 1/2 c. flour

ICING:

1 1/3 c. brown sugar
1/4 tsp. salt
1/2 c. milk
3 tbsp. butter
1 tsp. vanilla
3 c. powdered sugar

Cream sugar and shortening in a large mixing bowl. Add eggs, spices and raisins. Dissolve baking soda in milk and add to mixture alternately with flour. Pour into greased and floured cake pan and bake in 350 degree oven for 30 to 35 minutes or until cake tests done.

Icing Directions: In a saucepan, combine brown sugar, salt, milk, butter and vanilla and cook 5 minutes. Cool slightly. Add powdered sugar and beat until smooth.
