CATFISH STEW 
4 lb. catfish filets
1 1/2 qt. tomatoes and 1 qt. tomato juice
3 lb. potatoes, diced
4-5 lbs. onions

Use the following seasonings to taste: salt, pepper, oregano, sweet basil, bay leaf. garlic powder, Texas Pete, hot sauce.

Saute 4 or 5 large onions in bacon grease. Add tomatoes and tomato juice. Add diced potatoes; season to taste.

Prefry catfish in separate pan. When done, add to above sauce. Stir lightly, simmer until potatoes are done (approximately 1 hour). Add small amount of water if necessary.
