KONA BANANA BREAD 
1/2 c. shortening
1 c. sugar
1 1/4 c. flour
1/2 tsp. salt
2 eggs
3/4 c. mashed bananas (3-4)
3/4 tsp. baking soda
1/2 c. chopped nuts (optional)

Cream shortening and sugar until light. Add eggs, one at a time. Beat well. Stir in bananas. Sift dry ingredients and mix into batter. Pour into greased loaf pan. Bake at 350 degrees for 50-60 minutes until done at touch or by inserting toothpick in middle and it comes out clean.
